EGG FREE DESSERT
A wonderful dessert that will add variety to your GAPS diet during and after the introduction stages. Adjust the quantities for the number of people who will consume. It is a wholesome dessert and the entire family can enjoy it, whether they are on the GAPS diet, or not. Enjoy.
Ingredients:
4 medium apples. Two sweet and two slightly sour (you may use all sweet or sour)
1 cup of raisins or dry black grapes (wash very well)
3 cups of home-ground raw almond flour
3 cups of fresh shredded coconut, or fresh desiccated coconut flour (if buying from store, smell it for freshness or rancidity, there and then)
1 cup of sunflower seeds or pumpkin seeds
1 cup of ghee or butter or coconut fat
Equipment:
Oven, (micro-convection will do for baking when used on convection mode. We do not use any micro-waving on the GAPS protocol. Instead, a stove top oven will do, if you do not have an oven)
Glass baking dish of appropriate size based on how many servings you plan for (if using an aluminium baking dish, ensure that you use a baking liner. Do not allow your food to touch aluminium)
Chopping board, wooden or bamboo
Stainless steel knife
Spatula to spread the fat and the flours
Process:
Start the oven and preheat to 175 degrees celsius for 15-20 minutes
Chop the apples into slices (quarter and then eight if need be)
Put the apples on the bottom of the glass baking dish
Add the raisins/dry black grapes on top of the apples, spreading them evenly
Add the almond flour evenly onto the apples and raisins/dry black grapes
Add the shredded coconut on top of the almond flour
Add the sunflower/pumpkin seeds on top of the coconut flour, spreading it evenly
Add the ghee/butter/coconut fat on top of the entire dish as the last layer. You may use more fat if need be
Put the entire dish into the oven and bake for 40 minutes at 175 degrees celsius
Enjoy it hot, warm or chilled
Note: you may use a variety of fruits and nuts here, based on availability and freshness.
