Peel the onion & cut into four quarters
Cut the peppers into quarters and remove seeds
Wash & clean the Brussels sprouts
Remove the skin, seeds from the pumpkin and the zucchini. Remove the flesh. Rub the pumpkin and courgette flesh with salt to your taste
Peel the winter squash, remove the seeds
Peel the turnips and cut like potato chips
Cut the brinjal into chunks and rub with salt
Rub the vegetables with plenty of animal fat: ghee, butter, tallow, lard etc. Place them on a baking tray & bake at 180 degrees centigrade/celsius for 30-40 minutes. Check readiness with a sharp knife: if knife goes in smoothly, it’s done
Use the fat gravy under the vegetables to pour over the vegetables
Serve with meat & meat stock
Note: You may also grate some cheese onto the vegetables from the approved foods list and bake for 5-10 minutes or as long as it takes to melt.
