Ingredients:

3-4 large fish, river or sea fish. For better taste and benefit, different mix of fish is ideal. If fish fillets are available, use and save on effort. Ensure freshness. 

Note: 

Large fish here means weighing in at 1 -3 kilos for good chunky meat. It is the “larger” fish: tuna, swordfish, marlin etc. that are suspect for mercury content, as they feed on smaller fish and gather mercury in their body. Do note and do not fear the 1-3 kilo fishes.

If having river fish, ensure you are informed about the state of the river water. Polluted rivers will pollute the fish. 

Lake fish is also acceptable, with a caveat: only use lake fish from lakes that are in the catchment area: forests and areas that are controlled by the municipal authorities from polluting sources, as it is going to be used for human consumption. All over India, catchment areas are heavily forested to attract rain and the water source is rain-water collected in a lake. Most often these lakes are dammed and patrolled. This ensures fresh, unpolluted water. However, its availability may be less. Personally, as reported by a client, it is available on particular days of a week. Do verify purity all the same.

Good clean sourcing can never be overstated.

Small quantity of chopped fermented vegetables: cabbage, beetroot, carrot, cauliflower, broccoli etc.

4-5 tablespoons fat: ghee, butter, coconut oil. Any will do.

Home shredded/grated coconut 1-2 cups

Salt, pepper

Process:

Remove the skin off the fish and de-bone it, keeping aside the flesh (Use the fish head, bones and skin to make a nutritious, delicious stock/soup). If using fish fillets instead, proceed.

Add into the food processor, the fish meat, fermented vegetables, one egg, the fat of choice, salt and pepper to your taste and grind to make mince (kheema). Leave at room temperature for 45-60 minutes

After 45-60 minutes, remove and mix well with your hands, making oval or round cutlets 3/4 inch thick. 

Roll the cutlets in the shredded coconut

Place the cutlets on a baking tray pre-greased with fat. Add 1/3 cup of water to the tray

Pre-heat the oven to 160 degrees celsius/centigrade and place the tray in. Bake for 20-30 minutes.
