500 gms full fat minced (kheema) mutton
500 gms full fat pork or buffalo mince (skip this if you do not eat either. Instead use 1 kilo of full fat mutton/lamb)
Small quantity of home fermented vegetables: carrots, onions, beetroot, cabbage etc. A mix is best
1 large onion, finely chopped
Salt, pepper and mild spices
Mix the minced meat/s with the finely chopped home-made ferments and onion allow to marinate/ferment for 4-6 hours at room temperature
After the fermentation time, make 1 inch thick ovals or rounds from the meat mix and set in the baking tray, leaving gaps between each cutlet
Pre-heat the oven to 180 degrees celsius/centigrade. Put the tray in and allow to bake for one hour.
Serve with cooked vegetables and meat stock.
