500 gms fatty minced (kheema) meat: mutton/buffalo/pork or a mix. Ensure enough fat
Small bowl of home fermented vegetables: carrot, cabbage, beetroot etc
1 large onion
1 red pepper (capsicum/Simla mirch)
1 zucchini (tori/turai)
2 tablespoons chopped garlic
1 tablespoon homemade tomato purée
Coriander/cilantro (kothimbir/hara dhaniya)
Salt, ground pepper
2-3 bay leaves
Mix the meat of your choice with the fermented vegetables & allow to marinate at room temperature 4-6 hours
The sauce: cover the bottom of the pan with 1 1/2 inches of water and mix the tomato purée, salt & pepper. Bring to boiling point.
Make 2 inch balls of the minced meat and put them into the boiling purée (sauce) one by one ensuring that you keep only one layer of meat balls. Cover with the lid and simmer/low heat for 30 minutes.
In the meantime, prepare the vegetables: finely chop the onion and red pepper/Simla mirch. Cut the zucchini into cubes. Chop the garlic fine.
After cooking the meatballs for 30 minutes, add the onions, zucchini, salt & pepper. Mix gently without breaking the meat balls. Cover and cook for another 25-30 minutes.
Add the bay leaves and garlic. Put the heat off. Cover the lid and allow to sit for 15 minutes.
Sprinkle the finely chopped coriander onto the dish and serve with cooked vegetables or as it is.
